Prof. Vural Gökmen
The impact of acrylamide and other potentially toxic MRPs
Vural Gökmen is currently professor in the Food Engineering Department at Hacettepe University, Ankara, Türkiye. He graduated in 1990 as food engineer and completed his PhD in 1998. In 2004, he has founded Food Quality & Safety (FoQuS) Research Group. Prof. Gökmen's research focusses on understanding processing-induced chemical changes affecting food quality and safety. He is a leading experts contributing the research on acrylamide in foods.
